Dodoo Papaya

The characteristics of a good papaya fruit to be processed into lunkhead is as follows:
a. Reddish yellow fruit flesh
b. Yellowish red rind
c. The texture is rather soft flesh

How to make a Papaya Dodoo
Papaya 2 kg
Sugar 1 kg
Citric acid 2 g

How to Make:
1. Peel the papaya and remove seeds
2. Wash with lukewarm water, break up into mush
3. Ripe papaya pulp over low heat, then add the sugar and citric acid
4. Stir for ± 30 minutes until smooth and creamy
5. chill
6. Lunkhead into small pieces and packed in plastic
